Totally Bamboo's Congo cutting board is designed with the epicurean kitchen in mind. 16% harder than maple, Bamboo makes a superior material for cutting boards. The Congo cutting board is handcrafted using flattened strips of cured Bamboo bonded together with the highest rated, US laboratory tested and certified, formaldehyde-free adhesive specifically developed for food contact surfaces. Congo's size, 17.25 x 13.75, makes it perfect for all your larger cutting and serving needs. Congo's unique look is created using the end grain or cross-section of the bamboo pole. Small sections of the end grain are set in opposing directions creating the parquet design. No stains or paint are used to create the two-tones of Congo. The light tone is the Natural color of the Moso Bamboo and the scrumptious Honey shade is created in a very specialized heating process which caramelizes the natural sugar in the wood. These colors are permanent and will not fade or wash out. Care: wash with warm water and mild detergent and occasionally wipe with mineral oil (Do not clean in the dishwasher). Beautiful Jul 04, 2010 I received the cutting board in perfect condition. As recommended by another reviewer, I oiled it thoroughly to protect it. So far the knife hasn't left any marks on the board. It's very easy on the hands and beautiful.
Best Cutting Board Jun 01, 2010 Absolutely my favorite cutting board, and I have gone through a few in the recent months alone to compare to. The board has just enough heft to make it very stable. The crosscut bamboo is outstanding, I have another non-cross cut bamboo board and the difference is immense. This board is really nice to cut on, the cross cut gives a soft feel, without a lot of clicking or sliding of the blade to the side. This gives a lot of control and really keeps the edges pretty sharp for a long time. Even with the soft feel, the board is very resistant to scratches, and I chop pretty hard with razor sharp knives and have barely seen a scratch. Just make sure to buy some good food safe mineral oil to keep it supple, bamboo will crack over time if you let it dry out. The board, when well oiled is a breeze to clean even though its hand wash, I think that its actually so easy to hand clean that its easier than the dishwasher anyway. Cooks Illustrated rated this #1 and its very easy to see why, go for it!
Best cutting board I have ever owned! May 31, 2010 We purchased this cutting board about a year ago and couldn't be more satisfied with it. While the care of the cutting board was labor intensive at first it was worth the effort. It is just as beautiful today as it was when we first got it. It does not have any knife marks and does not dull our knives like some other boards do. If some of the previous reviewers had bothered to follow the instructions, they would not have had any problems and would not have had to write negative reviews. You must not let it soak in water, you need to hand dry it and most importantly, oil it regularly! We are extremely satisfied with this cutting board and would highly recommend it, as long as you are willing to take care of it.
The board warped in the first week May 26, 2010 We bought this board because of the Cook's Illustrated review. Using Cook's recommendations, we seasoned it with mineral oil on both sides. That didn't stop the cutting board from warping within the first week. I'm not certain whether the failure is the Cook's Illustrated recommendations, the board, or my application. But, whatever the failure, it didn't work for me.
GOOD PRODUCT May 03, 2010 We bought this because it was recommended by America's Test Kitchen, we have only used it several times, you must oil the cutting board before you use it, but it does look nice and it is solidly made.
